Here is a recipe for Hummus I put together after researching on the internet. It’s quick and easy but does require a food processor or blender (works best in a food processor – even better than a Vitamix which did not turn out as well).
- 1 can chickpeas (14oz)
- 3 tablespoons lemon juice
- 3 tablespoons reserved canning water
- 1/2 teaspoon sea salt
- 1/8 teaspoon cumin
- 1/8 teaspoon pepper flakes
- 1 clove garlic minced
- 3 tablespoons tahini
- Olive Oil
- Chili Sauce (optional – the pepper flakes makes it hot enough for me)
Drain chickpeas, reserving the canning water. Place chickpeas, 3 tablespoons of the canning water, salt, lemon juice, cumin, pepper flakes, and garlic in a Food Processor.
Process for a few seconds. Add tahini and continue until everything is smooth.
Drizzle with olive oil and a dab of hot chili sauce. Sprinkle paprika over top.
Note: I tried this without the salt and it was very bland. We figured that the amount of salt in this would be okay for me to eat.
TIP: Stir the jar of tahini with a chop stick to get the oil and solids all mixed up well before using. Then store the tahini in the fridge and it will stay mixed and you won’t have to do it again.
